Tradition and Innovation: The Evolution of an Excellence in Calabrian Agro-Food

Pastificio Fiorillo, founded in 2001 by Giuseppe Fiorillo, initially started as a small workshop specializing in fresh pasta production. Over time, the company evolved, and with the entry of his brother Michele into the business, the activity expanded to dry pasta production.

The idea behind the entire project was to enhance the Fileja, the traditional pasta format from the province of Vibo Valentia.

The entrepreneurial project of the pasta factory was not limited to mass-producing Fileja but aimed primarily at preserving the organoleptic characteristics, shape, and color of handmade pasta. To achieve this ambitious goal, meticulous studies were conducted, leading to the creation of specially designed machines to establish a production line capable of producing Fileja and a rich variety of pasta formats with the same care and attention as the handmade process, avoiding the use of thermal treatments at high temperatures that would alter the final product.
