Tradition in Innovation

This typical pasta has its origins in the agricultural and peasant culture of Calabria and is characterized by its curved shape. In the past, the production of Fileja was done entirely by hand, using a mixture of water and flour. Small pieces of dough were cut and then skillfully rolled around a knitting needle or, even better, around a “dinaculo,” a small stick made of rush.
